Oatmeal Raisin Power Cookies



I've been experimenting with various ingredients to stay away from the ones that aggravate my pre-diabetic condition. This gluten-free, low-carb, and high protein cookies are very easy to make. My husband said they remind him of cliff bars except that they're good and they're good for me.

Ingredients: 
1 ripe banana 
1/2 c peanut butter 
1/2 c flaxseed meal 
1/2 c old fashioned oats 
1/2 c almond flour 
1/2 c raisins 
1 tsp vanilla extract 

Method: 
1. Preheat oven to 375 
2. Mashed banana. 
3. Mix the rest of the ingredients. 
4. Chill the dough for 15-13 minutes. 
5. Scoop one spoonful of dough and with your hands roll into a ball. Repeat with the rest of the dough.
6. Lay them on a parchment paper-lined sheet and press to flatten them slightly (3/4 in" thick).
7. Bake for 12 minutes. 
8. Let it cool. Enjoy.
